Roc de Cambes is François Mitjavile's estate in the Côtes de Bourg, where he employs the same ultra-respectful approach to his vines as at Tertre-Roteboeuf. François waits until his grapes are super-ripe before picking, playing down his role thereafter. This presents ripe cassis and leather complemented by heady floral notes.
