Thorrington Mill is nestled at the confluence of two streams, just 3 miles from the Essex coast. The south facing slopes are a suntrap tempered by North Sea breezes, perfectly suited for vines. In 2018 husband-and-wife team, Mark and Polly Baines, took over the family farm to convert these 12 acres into vineyards. They named the vineyard after their historic mill, one of the only working tidal mills in the country.
The Bacchus is pressed very gently then fermented in stainless steel to preserve its aromatics. A small proportion fermented in used oak barrels to enhance the texture.
