Châtea Coutet, a classified growth, was described by Thomas Jefferson as the "best Sauternes in Barsac" Barsac, in common with Sauternes, is renowned for its morning mists. Signficance? The humidity encourages "noble rot" which sounds less than attractive but is key to the greatest of white wines, consuming the water content of grapes whilst fresh acidity shines through intense ripeness. Half bottles are an ideal size as an accompaniment or alternative to dessert - great with pâtés and Roquefort
