Fine is obtained by distilling the lees collected at the bottom of the barrels following each racking. The lees are collected and kept in barrel as the wine is ageing. Once a new vintage is bottled, the barrels of lees are sent to a distiller who produces a brandy, which is then aged in cask in Limousin oak for around ten years. The Domaine blends two to three vintages so that the final label does not bear a year.
