This is produced by distilling the pomace, the residual solids (seeds, stems skins) left after pressing. This residue is removed to large wooden vats, before distilling. The resulting clear spirit is then matured for ten years in Limousin oak, gaining colour and losing fiery alcohol - a Burgundy classic from a top producer.
