Run by Dominique Cornin and his son Romain, the vineyards lie within the confines of the Pouilly-Fuissé appellation. The domaine’s 10 hectares of vines are certified organic and cultivated in a biodynamic manner, with all vineyard work carried out by hand. They firmly believe in encouraging living soils and minimal environmental impact. The land is ploughed and synthetic weed killers are prohibited as soil vitality is essential to express the true character of the terroirs and preserve it for future generations. In the cellar, only natural yeasts are used, with wines given a light fining and filtration but otherwise left to run their course unimpeded.
As Dominique says, ‘my aim is to produce grapes that their children want and can eat without having to think twice’. The style of the wines here, like the landscape perhaps, is softer and more rounded than its more northerly neighbours in the Côte d’Or. Domaine Cornin’s wines are no exception: ripe, rounded and mineral, a gentle and generous expression of the Chardonnay grape.
