Thorrington Mill is nestled at the confluence of two streams, just 3 miles from the Essex coast. The south facing slopes are a suntrap tempered by North Sea breezes, perfectly suited for vines. In 2018 husband-and-wife team, Mark and Polly Baines, took over the family farm to convert these 12 acres into vineyards. They named the vineyard after their historic mill, one of the only working tidal mills in the country. From high quality Burgundian and German clones, the Pinot Noir grapes undergo cold soaking followed by fermentation at controlled temperatures with gentle punch downs giving the wine its perfumed elegance. 9 months of maturation in used Burgundian oak enhances the supple texture. Only 4,000 bottles were made.
