CAKEBREAD CELLARS

Jack Cakebread visited friends in the Napa Valley nearly fifty years ago and loved it there so much that he returned soon after to buy their land and Cakebread Cellars was born.

In the beginning this was only a small, family run business but over the years the winery has grown and Cakebread Cellars is now a thriving, internationally distributed wine company.

Director of winemaking Stephanie Jacobs, now oversees production from 16 different vineyards, upholding the winery’s style of complex, balanced wines that age gracefully.

The Family also own the Bakestone Cellars. A pair of wines offering their trademark freshness, concentration and complexity from select premier vineyards around Northern California.

Bakestone wines are an expression of the Cakebread Family’s experience of over four decades of winemaking in California. Within the various vineyards that comprise Bakestone wines, Cakebread look for grapes with up-front fruit character and complexity that can be enhanced by ageing in French oak barrels and will finish with an uplifting freshness.

Today there are no less than 7 members of the Cakebreads involved in the day to day running of the company and there is the same high level of care and attention to detail as when they first started.

As well as making wine, they also promote Californian wines and locally grown foods for a healthy lifestyle; they have a ‘famous organic garden kitchen’ at the winery and hold an annual seminar with top chefs, winemakers, farmers and the media to discuss wine, food and a healthy lifestyle.

VINEYARD

Most of the grapes in this wine come from the Suscol Springs Vineyard in the southeastern Napa Valley. The cool-climate rocky site with well-drained volcanic soils yield Merlot grapes with rich varietal flavors, bright, lively acidity and fine structure for aging. Summers are hot, dry and sunny while winters are cool and wet. This means that the vines tend not to suffer from water stress or drought.

Suscol Springs has a relatively cooler climate that allows for a longer growing season to help the grapes develop complex flavors as they ripen. For the Sauvignon Blanc their grapes are selected from throughout the Napa Valley, including Carneros, Suscol Springs, Rutherford and Calistoga.

The cooler, windswept southern regions of the valley impart bright citrus characters, stony minerality and balanced acidity, while the warmer northern regions bring out tropical notes.

Combined, these vineyards present the range of expression achieved by Sauvignon Blanc in the region's best growing areas. The southern vineyards benefit from the fog and cool winds that come from San Pablo Bay.

This microclimate means the grapes ripen more slowly than in other Napa Valley regions, resulting in lower sugar levels and higher acidity, maximizing freshness and achieving great depth of flavor.

Northern districts like Calistoga, where many of the grapes for this blend come from, are much warmer, offering rich black fruit flavors. The soil in Napa Valley is generally clay, which is good for holding water and nutrients.
