Olivier Azan has been making wine in the Languedoc since 1985 and was the first winemaker in the region to do so using organic practices. His skill and experience are shown here in the domaine’s flagship wine – Picpoul de Pinet, made with Picpoul grapes that are grown on the banks of the 'Bassin de Thau' where the marine mists and breezes impart their saline influence on the grapes.

Languedoc-Roussillon Wine
France’s ancient Languedoc-Roussillon wine region is also its most dynamic. Sweeping from Provence to the Spanish border, the Languedoc-Roussillon features craggy mountains, rolling hills, salt flats, and broad plains, harbouring vineyard sites and soils of unrivalled diversity. Warm, dry conditions, cooling Mediterranean breezes, and luminous sunshine give intensely-flavoured grapes.
