François Carillon is the 16th generation of a winemaking family which traces its Burgundian roots back to 1520. Since his first vintage in 2010, François has proven his domaine to be both a worthy successor to the much-loved wines of his father Louis Carillon, as well as making some of the most exciting modern white Burgundies. Following the retirement of Louis Carillon, the vineyards were divided between the two sons, François and his brother Jacques. Domaine François Carillon sits in the very centre of the village of Puligny-Montrachet. The wines hit the sweet spot between pristine fruit, precise acidity and textural richness, which we adore. François’ sons Mathis and Paul have recently joined the domaine full time. The future is looking particularly rosy here. Corney & Barrow has been the domaine’s exclusive UK agent since the inaugural 2010 vintage and are proud to work with the wines in Hong Kong, Singapore and Shanghai. The 2023 vintage wines of Domaine François Carillon will be released in spring 2025.

TASTING NOTES
MÂCON-IGÉ
This newer entrant into the Carillon line-up comes from vines in the village of Mâcon-Igé, where Domaines Leflaive also makes a wine. Hay and wax on the nose, leading into a palate of lemon rind, white peach and ginger spice. Pretty and characterful.

LA BERGERIE CHARDONNAY
La Bergerie is the name of this parcel in Montagnac, near Nîmes. It was one of the stars of a recent tasting in London. As it is made at the domaine in Puligny-Montrachet, it is a Vin de France rather than a Costières de Nîmes. An intense, spicy nose of white peach and cedary richness, leading into a fleshy, textural palate of pear, peach and orange zest. This was picked a little earlier in 2023, according to François, perhaps evident in its salty and precise finish. 13% abv.

C&B LABEL BOURGOGNE CÔTE D’OR CHARDONNAY
The C&B-François Carillon ‘partnership label’ was the first of its kind and has paved the way for others. It is intended as a C&B stamp of approval for a wine we believe is an outstanding example of its type. This wine now bears the elevated designation of Côte d’Or Chardonnay, coming entirely from the Côte rather than the wider Bourgogne region. Specifically, it comes from five hectares of Puligny-Montrachet, over various plots. Luminous yellow-gold colour. Apple and pear aromas, leading into a delectable palate of juicy stone fruit and fleshy generosity, with orange blossom perfume persisting on the finish. 15% new oak. 13.5% abv.

BOURGOGNE CÔTE D’OR CHARDONNAY LE VIEUX CLOS
This is a selection, in which specific plots and then barrels are isolated from the regular Bourgogne Chardonnay. It tends to be riper in profile. Baked apple and dried herbs on the nose, with gingery spice. The palate is tactile and tends towards yellow fruit, with orange blossom and citrus rind. This will hit the ground running. 15% new oak.

SAINT-AUBIN 1ER CRU BLANC LES PITANGERETS
Pitangerets is a lieu-dit in the south of the appellation, bordering Chassagne-Montrachet. These vines are 36 years old. Bright and zesty with good purity and cedary spices. The palate offers white peach fruit and white stony-mineral texture. Dry extract on the long, focussed finish. A wine of restraint and minerality, very appealing. 10-15% new oak.

SAINT-AUBIN 1ER CRU MURGERS DES DENTS DE CHIEN
This vineyard overlooks the grands crus of Puligny-Montrachet and is over the road from Les Champs Gains. François says this is closer in style to Chassagne than Puligny. The name refers to the vineyard’s stones being as sharp as dogs’ teeth. 2013 was François’ first vintage from this 0.67-hectare parcel. Fresh green apple and lime zest on the nose, leading into a palate of fine minerally texture, shape and extract. This is pure and open with crunch and precision.

PULIGNY-MONTRACHET
The domaine’s village Puligny-Montrachet is an absolute classic, and a flagship of the estate. It is made from four hectares of vines, spread over five lieux-dits: Derrière la Velle, Reuchaux, Corvée des Vignes, Tremblots and Les Rousselles. Honeysuckle and crème brûlée with white peach and jasmine on the nose. The palate is open and delectable, offering a more extrovert expression of the vintage, whilst remaining taut and finely textured. 10% new oak.

PULIGNY-MONTRACHET CLOS DU VIEUX CHÂTEAU MONOPOLE
Just behind the village of Puligny-Montrachet, this small monopole of 0.78 hectares is a warm, sheltered site with deep clay-limestone soils, within the lieu-dit Le Village. It has particularly mild night-time temperatures, perhaps contributing to a certain exuberance of style. Due to this high natural ripeness, it also tends to be the first parcel to be picked. Baked apple strudel with seductive white and yellow peach fruit and lime zest. Energy and richness, this is a joy-giver.

PULIGNY-MONTRACHET LES ENSEIGNIÈRES
Beneath Bienvenues-Bâtard-Montrachet, Enseignières is a village vineyard which can hold its own against the premiers crus. The domaine has 0.65 hectares here. An intense, highly classical nose of white peach fruit. The palate is chalky and extract-laden, with tactile minerality and zesty lime, which comes to an energic crunch on the long, driving finish. A high proportion of small millerand berries from these nearly-60-year-old vines make for a natural concentration. It was at this point in the tasting that we agreed we had changed up a gear.

PULIGNY-MONTRACHET 1ER CRU CHAMP-GAIN
The domaine’s holding in Champ-Gain is a steeply sloping two-hectare plot, planted with 50+ year old vines, high on the slope alongside Saint-Aubin’s Murgers des Dents de Chien. The soils are reddish in colour, rich in limestone and dotted with small pebbles. Peppery spices and fine white peach and pear aromas. The palate is finely detailed and a little shy at first, but with that linear drive of Puligny — very correct and with flair and energy blossoming on the finish. ‘Peacock’s tail’, I appear to have jotted down. This will be bottled at the end of April.

PULIGNY-MONTRACHET 1ER CRU LES FOLATIÈRES
The domaine has 0.4 hectares of Folatières, the most flamboyant of the Puligny premiers crus, which François has called l’enfant terrible du village. It is planted with 60-year-old vines on a steep slope, which produces naturally small berries. This plot is beside Leflaive’s holding. A wine of restrained flamboyance, this is well presented and classically attired, but you feel there is a big personality waiting to emerge. “Less fine, less delicate than the Combettes — robust, almost aggressive,” said François, I think in praise (I liked it anyway…).

PULIGNY-MONTRACHET 1ER CRU LES COMBETTES
The domaine’s 0.8-hectare Combettes holding was planted in 1992. The brown sub-soils are deep and stony, and the grapes tend to ripen earlier. Elegant and refined, with a tactile bite and compressed power. Vinified in a mix of 228L, 300L, 350L and 400L barrels, with 15% new oak, which you can currently feel but is more than matched by the rich yellow-hued peach fruit and tensile freshness. This is François’ favourite, which he says is elegant from beginning to end, and never changes. It is rather good…

PULIGNY-MONTRACHET 1ER CRU LES PERRIÈRES
François has 0.74 hectares of Perrières, spread over two plots, one of which was planted in 1973. White flowers and restrained white peach and pear fruit — all very restrained on the nose. The palate is chalky-mineral and incisive, a frisson of energy and clipped mineral precision driving the lemon tart and white peach flavours through to a rapier-like finish. Such energy. 15% new oak. If Combettes is François’ favourite, I think this is mine.

CHASSAGNE-MONTRACHET 1ER CRU
This is a blend of two Chassagne-Montrachet 1ers Crus- Chenevottes and Clos Saint-Jean, which are sometimes bottles individually. The Chenevottes parcel is a tiny 0.2 hectares in size, beside Macherelles, whilst the mineral-rich Clos Saint-Jean is high on the slope, just beneath Chassagne's barren Grande Montagne. The total production was just over 600 litres in 2022: two barrels were made. Rich and flinty, with bright, joyful peach and pear fruit.

CHASSAGNE-MONTRACHET
The domaine’s village Chassagne comes from Les Voillenots, on the Puligny-Montrachet side of the appellation. The 0.7 hectares here are split across an older vine parcel and a younger one. Tactile with pithy apple, chalky minerality and vibrant green limey/grapefruit zest. Correct and classical, with good energy, drive and extract.

CHASSAGNE-MONTRACHET 1ER CRU LES MACHERELLES
Macherelles is on the northern (Puligny-Montrachet) side of the village, from a similar terroir to Puligny’s Perrières, according to François, with very little soil above the bedrock. Rich and driving, this is a wine of verve and impressive power, with baked apple, cedary spices, sherbety zest and waxy lemon on the long finish. One for the hedonists but elegantly done. “The Perrières of Chassagne,” as François says.
