We owe thanks to our friend and Puligny-Montrachet-based supplier François Carillon for introducing us to his cousin, Jean-Marc Pillot, in January 2020. Jean-Marc has worked at the estate since 1985 and has managed it since 1991. He has implemented several changes, such as the construction of new cellars, and has expanded the vineyard holdings to nearly 15 hectares today. He has also reduced new oak use to around 10%, mostly utilising 3-year-old barrels. His son Antonin is a key part of this family team. These are lean, fresh, complex wines which showcase wonderfully the terroirs of Chassagne-Montrachet. White wine accounts for around three – quarters of production. The vines in most parcels are between 25 and 50 years old but can reach 90 years of age in some of the premiers crus of Chassagne-Montrachet. Four years after first meeting Jean-Marc in Hong Kong, we are delighted to offer our third vintage. Add these to your collection now, they are real gems.

BOURGOGNE CHARDONNAY LE HAUT DES CHAMPS


Le Haut des Champs is a cuvée name, based on the name of the lieu-dit where the cellar is located. This is 75% domaine-owned fruit, from Chassagne- and Puligny-Montrachet and the Hautes-Côtes de Nuits. It has been the same blend since 2019. Fresh white peach and pear fruit, with a nice crunch and definition. All barrel fermented.

RULLY BLANC LES GAUDOIRS 


Les Gaudoirs is in the southern part of Rully, the cooler sector, at higher altitude, which is visible in this wine’s clipped, crunchy precision. Apple and pear fruit, with pithy orchard fruit skin. Just under 20% new oak. This gets 16 months of élevage, the last four of which are in vat. No bâtonnage, as for all the whites.

1er Cru Raclots is in the centre of the village. It is always richer in character than Les Gaudoirs, according to Antonin Pillot, with whom we tasted. Unfortunately, we did not manage to taste the 2023.

CHASSAGNE-MONTRACHET


The domaine’s Chassagne village is a blend of six parcels throughout the village, which come to two hectares. Aromas of sweet stone fruit, with lime rind and grapefruit. The palate is stricter, with flinty extract and shape. 25% new oak, with vinification mostly in larger 350L barrels.

This is a négociant bottling — the date of harvest was a little later here than at the domaine. It comes from one plot, in the warmer south of the appellation — just three barrels are made. There is almost no top soil, which tends to make for a particularly mineral style. Ripe stone fruit on the nose, then fine and clipped on the palate, with mineral definition.

The domaine owns 0.25 hectares of Macherelles, in the north of Chassagne, in one plot. This is fertile soil, which retains water and, according to Antonin Pillot, results in higher-acid wines. Lean and mineral, taut and stony mineral. One for the classicists.

This is a domaine bottling. It comes from two plots of 0.4 hectares in total. The larger of these is just beneath Les Vergets, in the north of Chassagne, at the top of the slope. A flinty-mineral nose leads into a fine, clipped palate, with friable white peach and sea shell minerality. 30% new oak.

PULIGNY-MONTRACHET LES NOYERS BRET - ASIA ONLY


This plot is fabulously sited, beneath Puligny-Montrachet’s much-loved Enseignères, with a little more clay and therefore richness. It is the domaine’s only parcel in Puligny. Sweetly fruited, with sherbet and lemon zest, with a nice density to the mid-palate. This spends 12 months in barrel, then six months in vat.

This comes from 0.35 hectares of Les Fairendes, a large mid-slope vineyard in the centre of the appellation. Chalky-mineral and finely, energetically driven — this is a powerful and driving wine, very impressive.

This is made of 80% domaine-owned fruit, from Chassagne-Montrachet and Santenay, with some 5% négociant purchases from the Côte de Nuits. Crunchy and red-fruited, with a fine acid backbone. This is being bottled in January 2025.

CHASSAGNE-MONTRACHET ROUGE VIEILLES VIGNES 


As the suffix Vieilles Vignes suggests, the domaine’s village Chassagne-Montrachet is rather impressively the product of 50–60-year-old vines. Juicy raspberry and blackberry, with bitter cherry. 7,500 bottles were made. This will be bottled in February-March 2025. 25% new oak.

This is an old plot of 0.40 hectares, of which a third was grubbed up in 2024. Bright red cherry and berry fruit — a wine of purity, intensity and persistence. These grapes are now pressed with a vertical press which, in Antonin Pillot’s experience, aids its sense of purity.

CORTON-BRESSANDES GRAND CRU – HK ONLY


Moving north to the hill of Corton. The grapes for this wine are bought from a friend of the Pillot family. Crunchy, with intense bitter cherry and wild strawberry fruit, framed by fine, fruit-coated tannins and enriched by chalky mineral definition. Only two barrels were made in 2023.
